Carpathian is our favorite Rocambole, and maybe our favorite garlic. This hardneck garlic has a balanced and rich flavor that is delicious cooked or raw. Good heat that mellows with cooking. Large, easy to peel cloves with very few double cloves. Higher disease resistance compared to other Rocamboles. Carpathian gained popularity when Cook's Illustrated magazine's America Test Kitchen named it among their favorite cultivars.

Your garlic order will ship out in October. Orders are shipped in the order they are recieved.
We do not ship our garlic until October, as many diseases and pathogens need time to fully present themselves. Garlic shipped too early may deteriorate before planting season, shipping later in the season allows for any underlying problems to present and be culled before shipping.
